Vegan Mac and Cheese Recipe


Vegan Mac and Cheese | The Eco Friendly Mom

Vegan Mac and Cheese for the win! My husband has been working on perfecting his recipe and this was the best one yet. It had the right amount of creaminess and is toddler approved 💚 

What you'll need:

  • 1/2 a stick of vegan butter - we use Earth Balance 
  • 1 box of pasta - we used little shells 
  • 1 cup of Almond milk
  • 1/4 cup of flour
  • 1 pack of Miyoko's chive vegan cheese
  • 1/2 cup of vegan mozzarella - we used the Daiya Mozzarella Style Shreds
  • 1/4 cup of nutritional yeast
  • 1 tbsp of Dijon mustard
  • 1/4 breadcrumbs
  • Salt and pepper to taste 

Instructions: 

  1. Boil pasta and then strain. 
  2. Put pan on medium heat and add vegan butter. Once melted slowly add in flour while whisking. Add your almond milk and stir until it thickens- if it is too watery add more flour and if it’s too thick add more almond milk. 
  3. Stir in remaining ingredients both vegan cheeses and nutritional yeast. Add salt and pepper to taste and stir until combined. 
  4. Then add pasta and mix it together. 
  5. Once combined pour mixture into a baking pan. 
  6. Add breadcrumbs to the top. 
  7. Cook on 375 for 20 minutes.
